Cherry Filling
32oz / 907.2g Dried Bing Cherries
32oz / 907.2g Water
.14oz / 4g Agar Agar
Bring water to a simmer and pour over
cherries in a bowl. Let sit for 1 hour.
Drain water. Puree cherries and pour
into a small sauce pan. Bring puree to
a boil and whisk in agar agar. Let boil
for one minute, remove from heat and
strain puree. Let chill for 2 hours before
use.
Pistachio Yeast Donut
6oz / 170g Milk, Whole
1.25oz / 35.44g Butter, unsalted
½ each Vanilla Bean, scrapped
.25oz / 7.08g Yeast, active dry
8.25oz / 233.89g Water, warm
1 each Egg
.25oz / 7. g Pistachio extract
1.1oz / 31.19g Sugar
¾ tsp Sea Salt
11.5oz / 326.03 Flour, all purpose
Heat the milk and butter over medium
heat with the vanilla bean until the
butter is completely melted. Sprinkle
the yeast over the water in a mixing
bowl and let sit until dissolved. (About
3 minutes) With a paddle attachment
and while mixing on low speed, add
the warm milk and butter mixture. (Be
sure it is not hot – under 90 degrees)
Add the egg and pistachio extract. Add
the sugar, salt, and flour and mix on
medium speed until it comes together.
Switch to a dough hook and mix on
medium speed until dough pulls away
from the sides. (About 3 to 5 minutes)
Place dough in an oiled bowl and cover.
Let sit until double in size (about 70
minutes).
Roll dough on a floured surface until ½”
thick. Cut doughnut holes with a 1 ¼”
round cutter. Align on a floured sheet
tray, lightly flour the top and cover with
a moist towel. Let rise for 40 minutes.
Fry in 350 F oil for about 3 minutes
(90 seconds on each side). Doughnuts
should be golden brown when done.
Drain on a towel. Keep under a heat
lamp until use. (Doughnuts hold for
about 45 minutes until they start to get
dense)
Vanilla Bean Glaze
8oz / 226.8g Sugar, powdered
2oz / 56.7g Milk, whole
.1oz / 2.84g Vanilla bean paste
Mix milk and vanilla bean paste
together. Whisk in powdered sugar.
Keep in an airtight container. Warm
before use.
Pistachios (Garnish)
Toast lightly, cool
Chop to small pieces in a Robo-Coupe
Set Aside
Assembly
Using a piping bag with a small round
tip, fill the pistachio donuts with the
cherry filling. Dip the flat surface of
each side on the doughnuts in the
vanilla bean glaze and then into the
chopped pistachios.
